I want to get my front and rear bumpers rechromed, but don't want to have the Stag off the road - does anyone know whether it is legal to drive a car with the bumpers removed?

As long as your front number plate is visible, and, if a Mk1,you have rear number plate illumination from another source (like a MkII bootlid) you should be fine
as Kevin has mentioned, no shap edges must stick out from the bodywork
