I think Nib is right, the question you should be asking is where is my water going. The Electric fans are certainly useful as a back up, but installing one won't help the water loss, that needs investigating first.
I do not have any signs of water loss anywhere on the engine, I have not topped up the expansion tank for soem time as the temperature remains quire stable, the level in the expansion tank increases when the engine stops from working temperature, so I suppose it is doing what it is supposed to. My instincts are to take out the original fan, and fit a Kenlowe, I have done this before with an MGB and it was very good.

although the expansion tank is always empty when I look at it, the temp of the engin when warm is always between 80 and 90 degrees and never goes above.

Just changed the thermostat on Colonel Mustard today (Partco had one in stock for £6!!!). Made a tremendous difference...the temp gauge now rises to about one third of the dial and the heater works. Still like the piece of mind in having a kenlowe fan as well as the viscous one. I've turned the temp switch up a bit because it came on far too early.
I also like the fact that the kenlowe can come on by itself without the engine running...that's a bit lump of metal in a Stag V8...when you turn it off the water pump stops, but the metal is still hot and heat soaks the coolant...I find the fan may cut in up to 3 times after switching off if the car has been driven hard.

If the expansion bottle is empty you need to top it up. If it still goes empty, something is wrong (or have I misunderstood you?). Even though you may not see a leak, coolant can be invisibly sucked into the engine via inlet manifold gasket or head gaket leaks.
