How to stag soft tops handle heavy rain? Can water penetrate the fabric. I've never really thought about this before but one of the stags I saw over the weekend, the owner said the top would only stop showers and with heavy rain it would soak though? I never had that problem in my spitfire but it wasn't mohair.

Depends how the soft top has been made. The one on my Stag has been there since long before I bought it >17 years ago, I guess it is at least 25 years old. It does not leak through the fabric or seams. I haven't a clue where it was made, but the rear screen is still clear.
Some are stitched through and, if not treated, will leak. Renovo do a good soft top treatment that it claims waterproofs seams. I have used it very effectively to recolour my faded hood. They sell it online, or it can be found on eBay. The last lot I bought was from the local SAAB dealer as they stock it (or used to) for their convertibles, that have mohair hoods.
Better quality hoods are stitched in a different way so that the seams are hidden.
