The caps hold a temperature compensator one for each side It's a few strips of thin metal that react to heat and raise a tiny valve allowing more or less air in depending on the temperature. Without this fitted you'll have a air leak and most probably a fuel leak so be careful. They list kits of these parts in most of the stag suppliers.
Sorry to hear that. I recently hit a cat that shot out into the road, fortunately it hit the side of the car. Went back to see it and it shot off again. Dunno who was more shaken. Hope it was ok, no houses around to ask ownership. Hope your cat recovers fully.
That's the throttle bypass valve, to limit manifold depression on overrun but again I'm not sure if Mk1 carbs had it fitted.
You need to identify what you have first, if they are early or later type Most owners dump the early ones and reconditioners won't take them as service exchange.
