Went for a drive today and noticed that the temperature gauge only just about made it to the "C" i assume it may be the sender however though that i would ask before i get the credit card out.

Is the fuel gauge reading correctly - if not it could be the 10V voltage regulator.

Terry. Point your laser thermometer at the back of the N/S cylinder head where the gauge sensor is fitted. It should be around 80 there as well, and if it is, and the fitted gauge is reading low, then it is a gauge issue. If the temperature there is much lower, then I suspect the thermostat has failed.

Run her up to temperature today, at the thermostat housing the temp was 88c photo 2 at the sender at the back of the near side head photo 3 it was 81c and as can be seen the gauge photo 1 was just above the cold. I removed the connection from the sender and earthed it and the gauge went straight up to the H. I assume that the sender may be at fault? What do you think

The 1/4" spade terminal on the temperature sender isn't insulated, so my guess is that the teminal was resting on thre earthed engine, which would make the gauge go right to the top.
If that is so, then the sender is faulty.

Is the correct temp at the thermostat body, and at the temp sensor, when using a laser thermometer , circa 80-90c ?
Mine last night was around 60c , but that was after a 10 mile rule, in an air temp of 0c . The gauge has always been low, ie about a quarter to a third of the distance between cold and hot, assuming normal is at half.

Note that the area around the sensor increases in temperature after stopping the engine due to heat soak, particularly following a long run with the engine working quite hard (seen mine go up to ~110degC), so best to do your IR thermometer readings with the engine running, or leave the ignition on so your dash guage is powered up.

As a reletive newbie, I suppose I feel( probably wrongly) a bit relieved that this question is based around " cool runnings" , when I've always been more concerned about it going the other way. I expected it to be low last night as it was only a short run in cold ambient temp.
I bought the laser thermometer a couple of months ago , only 15 quid on Amazon, and have used it for a lot of different things. Very accurate for something so cheap, within 2c on a pan of boiling water used as a check when I first bought it.
