Cooling fan - what temperature should it kick in ?

I recently fitted a revotec on my Stag with TV8. The sensor sits in the top hose and is adjustable.
Using an infrared digital thermometer on the top hose, what would be a suitable temperature for me to adjust the stat to ?
    Thanks.

Not too low, you need the radiator to work in it's range effective, typically the rads only drop across the rad about 5 deg from hot in to cool out. Depending what thermostat temperature you have fitted but I have my thermostatically controlled fan coming on at 90 deg.

Mine cuts in @ 92/93C, going off @ 89/90C. Some reckon on 95C, but I'm not sure it makes a huge difference. IIRC the coolant (30% antifreeze) boils ~140C with a 20psi cap.

My robotic is set to come on around 95 degrees. It doesn't reach this anymore because I have a good viscous coupling.

My setup with EWP is set to 85 degrees , no stat the ewp controls Kenlowe and I have no Viscous fan fitted. It all works well. And Evans Waterless Coolant!

95 to 97 on mine, the high speed cuts in about 5 degrees above that.

I still have the viscous fan, so the kenlowe is for safety and extreme circumstances, like coming suddenly to a stop in traffic after prolonged high speed running.
Header tanks - you can't beat a bit of bling.
