Agree with your concerns on the grounding issue, Terry. Think a single relay shorting out the pot is worth trying. I have a further concern as to how well the PWM would handle the fan becoming a generator with the airflow causing an increased fan speed over the set speed, though unsure how likely that would be (I recall having issues in this area with variable power supplies in the past, though this was with power electronics of at least a couple of generations ago). A series diode (or even a bridge rectifier) between the PWM and fan might sort this.
I too am planning to fit a Davies Craig EWP in the near future so would be interested to hear how you get on. From the operating chart, the fan is at least a straight on/ off rather than proportional control. Chart for Davies Craig EEWP.jpg
Short of modifying the radiator mountings to move it closer to the front of the car, I can't see there being space for a puller fan.
